After a time sharing a kitchen with the family chicken roasting outfit, Artur Martínez explains he’s moved up to sharing space with a 400-room hotel. How did that come about? Martínez wanted to move his El Capritx (which was the smallest Michelin star restaurant in Europe, seating just 12 diners at a time) from Terrassa into Barcelona, and ended up opening Aürt in the Diagonal Mar Hotel, which was awarded its first Michelin star in November 2019. Aürt does mean something in Catalan, if you’re curious: a sudden hit or blow. And it seems to describing what Martínez and Aürt have done, that is, create a concept that didn’t exist on the local gastronomic scene, with one swipe changing definitions with the ironic label of ‘posh street food’ or ‘lobby food’.

Integrated into the hotel lobby – you’re practically hit with the restaurant when you walk into the hotel, another nod to the name – Aürt is a space that seats 17 guests, divided into a small table for six, a large table for eight, and one smaller round table for anyone who wants a bit more privacy. And all the cooking is done before your eyes, as each table or bar area features an induction cooker, and the ‘office’ is equipped with a griddle, oven, grill and a wood-burning stove. Says Martínez, ‘The physical separation with the diner dilutes conversation, so you miss out on information.’ Since 2017 the chef has been creating a theory, and he started his new stage with what he describes as a continuing of a Capritx tasting menu that’s been made more radical and deeper, now that they have done away with logistical limitations.

Martínez uses the term ‘local exoticism’ to define his cuisine. The tasting menu comes in at 14 dishes for at €95, where, following the apparent obviousness of items such as bonito with vinaigrette or prawn ‘salmorejo’, Martínez and his team put their food in and out of context and reinvent it into comprehensive marvels that open up new worlds for all the senses. Another surprise is what’s on offer in the Ma’i lobby, where Martínez has reinvented the concept of the hotel bar/restaurant with signature tapas, and a drinks menu light-years from the dull, overpriced, and just plain poor execution you often find in hotel bars (even luxury ones). Here local products shine in all areas: ‘If I didn’t prepare my work here as a showcase for local products,’ says Martínez, ‘my being here wouldn’t even make sense.’

ABaC is the third of the Michelin restaurants in Barcelona, Spain with a trio of stars to its name. Head chef Jordi Cruz is a well-known judge on the Spanish version of Masterchef. This eatery in the northwest of the city overlooks a glorious garden.

Many of founder Mey Hofmann’s proteges have gone onto Michelin-starred success. Her daughter Silvia now fronts Hofmann in Barcelona. The dining room here has a large picture window so guests can observe activity within the kitchen.

Michelin Red Guide

The Michelin guide was first created by André Michelin in 1900. Initially, it did not include catering establishments, but various places that a traveler might find useful: auto repair shops, hotels, shops, etc.

In 1926, the tradition began to mark establishments with excellent cuisine in the guide with an asterisk. In 1930, 2 more stars were added.

They have the following meanings:

1 star – an extremely good restaurant for its type of cuisine, which should be visited if it is on the tourist route;

2 stars – an excellent restaurant, for visiting which it is worth making small adjustments to the original travel plan;

3 stars – a restaurant with an unsurpassed quality of food, for the sake of tasting dishes it makes sense to plan a separate trip.

Michelin stars are awarded not to the restaurants themselves, but to the chefs working in them. There were cases when the culinary specialist left the establishment, taking the award with him. The criteria for awarding a particular rating to a restaurant are not exactly known and are a commercial secret of the Michelin company.

According to the guide, the assessment is based on the kitchen, and everything else (service, interior, etc.) is insignificant in relation to it. An example of this is when in 2016 a street food vendor from Singapore who prepared chicken noodles received a star.

Red Guide is the most famous and influential restaurant rating today.

Sant Pau Barcelona restaurant with 3 Michelin stars

Sant Pau is a European restaurant with 3 Michelin stars.

A restaurant run by a female chef, Carme Ruscadella. Decorated in a simple, minimalist style. Panoramic windows offer sea and garden views. The establishment has a terrace where guests are invited to drink tea, coffee or cocoa with signature desserts. Places in the establishment must be booked in advance, preferably 2-3 months before the trip to the capital of Catalonia. A meal in Sant Pau lasts a long time: cooking and eating a tasting menu takes 3-4 hours, so it’s better not to plan anything for the day.

The restaurant specializes in author’s cuisine with original and creative serving of dishes. The menu changes depending on the season, supply of ingredients and other factors. In the institution you can taste the author’s delicacies: peas with shrimp in sea water jelly, tomato-strawberry salsa, Iberian ham, sakura leaf ice cream. There is also more familiar food: gourmet steaks, kebabs, seafood, fish and vegetable snacks.

The experience is complemented by an excellent list of red, white and sparkling wines.

Two-star Michelin restaurants in Barcelona

When choosing which Michelin-starred restaurant to visit in Barcelona, ​​you should pay attention to establishments with 2 stars. They guarantee not only good quality of dishes, but also excellent service from waiters and sommeliers.

ABaC

This restaurant is decorated in a modern style and can seat up to 56 people. The institution is surrounded by a well-groomed garden with trees and flowers, which offers a beautiful view from high windows. The menu features original author’s recipes: blue crab, oysters with green apple ceviche, pigeon meat, etc.

ABaC is a prestigious venue with two legendary Michelin stars.

Michelin experts also noted a good wine list of the institution, represented by vintage drinks of Spanish production.

Enoteca

Establishment at the Hotel Arts Barcelona. Specializes in Mediterranean cuisine, especially fresh fish and seafood dishes. Chef Paco Perez participated in the preparation and development of the menu. On weekends, only dinners are served here, on weekdays – also lunches.

The hall of the establishment is decorated in white colors and decorated with shelves with bottles of wine – you can also order them in the restaurant. In total, there are more than 700 varieties of a noble drink: professional sommeliers will help guests choose the right one.

Enoteca is a two-star Michelin restaurant.

Lasarte

Restaurant specializing in Catalan and Basque cuisine. Consists of 2 halls: large and small. The latter is separated from the kitchen by a glass wall, through which you can watch the preparation of culinary masterpieces live.

The menu, designed by Chef Paolo Casagrande, includes meat, fish and seafood dishes, appetizing starters and gourmet desserts.

In the capital of Catalonia there is a fairly large number of restaurants awarded 1 Michelin star. They are worth visiting if they are close to the planned tourist route.

L`Angle

The institution is located in the center of the Eixample district, within walking distance from the main attractions of Barcelona. Here you can taste numerous fish and seafood dishes (squid, shrimp, octopus).

Via Veneto is a classic restaurant.

Classic restaurant recreating the atmosphere of the La Belle Époque era. It consists of several large halls located on different floors: they are suitable for dinner for two, as well as for banquets and annual festivals. The establishment has a wine cellar with a depth of 6 m, awarded several individual awards.

The restaurant’s kitchen is led by chef David Anderson. It combines the ancient traditions of Mediterranean gastronomy with modern methods of cooking and gathering ingredients. Of particular interest to tourists are original dishes of black truffles and assorted aged cheeses.

Restaurant with creative contemporary cuisine created by Chef Claress Abellan. Decorated in modern style. There is an open kitchen and a bar. Cinc Sentits

The name of this restaurant translates as “5 senses”. It consists of 3 rooms: a small dining room, a chef’s table and a main room for up to 40 people. Dishes for the establishment are developed by chef Jordi Artal.

The restaurant’s menu is divided into 2 types (degustation and light) and consists of 8-11 dishes that change every season. Their feature is that the main ingredient is never repeated twice.

Cinc Sentits translates as “5 senses”.

Wine can be ordered to complement the menu. The composition of the drinks is carefully selected by the sommelier of the establishment so as to complement the taste of the food.

The wines are exclusively Catalan and Spanish, mainly from small wineries that emphasize family production traditions and use local grape varieties.

Alkimia

Alkimia is a restaurant with an honorary Michelin star.

Hisop has been in operation for over ten years.
