Easy Aioli Recipe (All-i-oli/Alioli): Traditional vs. Modern

The perfect accompaniment to fish, rice dishes, bread, or anything that could benefit from a creamy, garlic sauce, this easy aioli recipe will be ready in 5 minutes flat. If you’ve got more spare time, and are more adventurous, though, try the traditional vegan aioli made with mortar and pestle.

Here in my region of Valencia, Spain, aioli is a very common condiment. You can find it on the table, served with bread and/or rice dishes, at just about any traditional local restaurant.

What is aioli?

Aioli is an emulsion made with garlic and oil. This is obvious from its name as the term “aioli,” often spelled “allioli,” comes from “all i oli,” meaning “garlic and oil,” in the Valencian and Catalán languages.

Traditionally, alioli was made in this region in a mortar with a pestle using only garlic and olive oil with a little salt. No egg was used to help form the emulsion.

Traditional aioli, though, is very finicky.

The garlic and salt are beaten into a paste with the pestle, and olive oil is added in, drop by drop, while continuously mixing it in a circular movement until an emulsion is formed. As the emulsion builds up and gets more stable, you can drizzle in small amounts of oil at a time, continuing to incorporate it into the emulsion before adding more oil. (My husband says that you can tell when it’s time to add more oil when you feel the mixture get thick and provide resistance to your movement.) That said, you have to be very careful.

You can’t stop moving the pestle, and the oil must be trickled in ever-so-slowly. Some say that even by changing the direction of the circular movement is enough to cut the emulsion and keep it from properly forming. And, as I mentioned earlier, adding too much oil at a time can break the mixture and mean that you have to start all over again.

So, to make a traditional aioli, one needs patience and persistence. When it comes to this sort of thing, knowing that there is an easy alternative, neither is my forté.

To be honest, I have tried to make traditional aioli several times, always unsuccessfully! Yes, always!

That’s why I “hired” my husband to make a batch for me in my video for how to make aioli (both ways). He is much more patient than I am with this sort of thing.

Ingredients

Well, as I already stated, all aioli uses oil and garlic.

Maybe because of the difficulty, or maybe because eggs became more readily available, the aioli of this region began evolving. People started to add an egg yolk to the emulsion made in the mortar. With time, the arrival of handheld blenders and new types of oil, like sunflower oil, has changed the way that most people make aioli even more. Modern aioli is now very easy and quick to make. In fact, it takes me less than 5 minutes to whip up a batch!

Traditional aioli vs. the modern, easy variety

Modern aioli, then, differs from its traditional predecessor in a number of ways.

First, modern aioli is made with high-speed blenders rather than by hand using a mortar and pestle. If you have a food processor with a high enough speed, you may actually be able to make a more traditional only-garlic-and-oil aioli in that food processor. I actually did that by accident one day while attempting to make a vinaigrette salad dressing in my Thermomix food processor. I was amazed by the aioli I made instead!

Second, modern aioli normally needs an egg to help form the emulsion. The egg acts as an emulsifier that makes the process much easier and more foolproof. Gone are the days of carefully dripping in the oil drop by drop! Of course, that also means that modern aioli is no longer normally vegan.

Third, modern aioli is normally creamier and less potent. The egg changes the texture of the final emulsion, giving you a much creamier sauce. The egg is also the main emulsifier, meaning that you can more easily adapt the strength of a modern aioli by adding more or less garlic. When making both versions of aioli on the same day to videotape the processes, we used two cloves of garlic for each. We ended up being able to make much more of the modern style aioli using the same amount of garlic, meaning, of course, that our traditional aioli ended up being much more concentrated. (The traditional aioli uses the garlic as the emulsifier.) If you like a strong aioli, though, you can always add more garlic cloves to the modern type, whose strength is much easier to adapt.

Lastly, modern aioli tends to use different oils or a variety of oils…

What oil should be used?

Traditionally, aioli was made using only olive oil. Some people find the flavor of olive oil to be overpowering, though. This is especially true if you are using an extra virgin olive oil, which is the type of olive oil that I normally use in my kitchen for just about everything.

If you find extra virgin olive oil to be overpowering, you can use other types of oil in your homemade aioli.

Here in my region of Spain, it is very common to use sunflower oil when making aioli. Refined sunflower oils are very mild in flavor and very easy to use. Because my husband and I like to use unrefined type oils when possible, we once tried using an organic, unrefined sunflower oil in this recipe. Sadly, the unrefined sunflower oil had an overpowering flavor that didn’t fit the aioli sauce at all, and to top things off, it was actually difficult to get to work in the emulsion. While I rarely have issues making aioli by the modern, handheld blender and egg route, my first two attempts at making aioli with the unrefined sunflower oil failed! (I’m not quite sure why. )

So, if using an unrefined oil is important to you, I’d consider using a light olive oil instead. There are olive oils on the market that are milder in flavor and that are perfect for making aioli.

The last option is to combine oils. Many people here make the majority of the aioli with a refined sunflower oil, and then finish it off with a dash of extra virgin olive oil to give it a hint of olive oil flavor without it being overpowering.

  • ▢ 1 egg
  • ▢ 1/2 lemon juiced
  • ▢ 2 cloves garlic (1-4 depending upon the desired potency of the aioli)
  • ▢ 3/4 cup olive oil or more; may also use sunflower oil or a combination of oils- see notes below.
  • ▢ 1/2 tsp. salt adding more, as needed, to taste
  • Mince the garlic. Add 1 egg, a dash of salt (around 1/2 tsp. to start), and a dash of your oil of choice into a mixing container for a hand-held blender.

  • Start blending the mix as you SLOWLY and continuously pour in a thin stream of oil. The emulsion will start to form, and will thicken as you add in more oil.

  • Add in the juice of half of a lemon and continue to blend until it is fully incorporated. You can continue to add in more oil, as needed.

  • When the aioli is thick enough (it can get thick enough to hold the blender up, or can even be turned upside down without falling), stop blending, and taste the aioli for necessary adjustments.

  • Add in more garlic, lemon juice and/or salt as needed to suit your taste.

People here usually use sunflower oil for making aioli, sometimes with a dash of extra virgin olive oil to give it a little bit of olive oil flavor. Others use a subtly flavored olive oil rather than using only extra virgin olive oil which imparts a very strong flavor, too much for most people. Of course, if you are brave, go ahead and try it with extra virgin olive oil.

The ingredients aren’t perfectly measured out to the last gram, but this is a taste-as-you-go sort of recipe. Want it saltier? Add more salt! More acidic? Add more lemon. Thicker? Add more oil!

I have to admit that I prefer the traditional aioli, but haven’t been able to master the art of making it myself. I have accidentally made it a few times when making salad dressings with my food processor, and even once or twice with my handheld blender, so even that is possible! (It just never seems to happen when you want it to.) 😉

Meanwhile, this easy aioli recipe is a great alternative. It is much better than anything you can buy in the stores, and when you make it yourself, you can control your ingredients and keep the artificial ingredients and hydrogenated oils out!

Allioli Recipe – NYT Cooking

Allioli is the Spanish version of the French garlic sauce aioli — or is the other way around? A spoonful stirred into fideus noodles, paella or fish soup adds richness and a truly garlicky flourish. The purist version is made only with garlic and oil, but it’s rather tricky to achieve a proper emulsion that way, so most people use egg yolks and make it like a mayonnaise.

Yield: Slightly more than 1 cup

  • 4large garlic cloves, smashed to a paste with a little salt
  • 2egg yolks
  • 1cup extra-virgin olive oil
  • Salt and pepper

Ingredient Substitution Guide

  1. Step 1

    Put garlic paste and egg yolks in a mixing bowl and whisk together. Whisk in olive oil slowly, a tablespoon at a time, until mixture begins to thicken. (Caution: Adding oil too quickly may cause the sauce to curdle.)

  2. Step 2

    When ½ cup oil has been added and sauce is quite thick, whisk in 2 to 3 tablespoons water, then continue to add oil gradually, thinning once more if necessary. The consistency should be like whipped cream, but not too stiff. Season with salt and pepper. Refrigerate for up to several hours. Sauce tastes best the day it is made.

Tips

  • Hand-held electric beaters, or a stand mixer with a whisk attachment, make the job easier, but an ordinary wire whisk works fine. To make in a blender or food processor, use 1 whole egg and 1 egg yolk instead of only yolks. Drizzle oil in a thin stream with motor running until the sauce thickens, which takes only a minute or so. Transfer to a small bowl, then thin with a little water and season with salt and pepper.

5. Cornflowers

I would like to say a few words about this song. I heard her in
the first (and only) time from a fifteen year old country girl who
came to work in Moscow and got a job as a nanny to the child of neighbors. Outside
was 1954.

From the first to the last line, it immediately – and forever – sunk into my memory.
It struck, you see, a child’s imagination. Much later, I discovered that the “first push”
to create it could be the lines of a poem by A. N. Apukhtin (1840-1893)
“Crazy”. Then, however, the plot flowed in a different direction. In the future, this
The song came across to me in one of the collections. There she was more consistent
and logical than “mine”. But in this book I present that first, somewhat enigmatic
an option that I remember from childhood.

“We left the Kino, part 2”: an album of covers for the 60th anniversary of Viktor Tsoi

Viktor Tsoi would have turned 60 on June 21. For us, he still remains a backbone artist, the most important rock musician of our time, the last tie of the last thirty years. The way his work is seen by those who grew up after his death, how it is being rethought now, says a lot about us. “Afisha Daily” and “VK Music” present the collection “We left Kino-2”, in which different musicians – from “Kurara” to “25/17”, from Buckwheat to “Makozeba” – sing Tsoi’s songs. The author of the idea is Ilya Bortnyuk. and listen to the first part of the tribute released in 2017* and our special project for the 30th anniversary of Tsoi’s death.

( 14 ▶ ) One track always hypnotized me, I often hummed it in my head at different periods . And now the words of this song are close to my life. I would like to wish everyone a peaceful sleep. When I recorded the vocals, I had tears, it caused a storm of emotions in me. The song chose me, not me.

Before becoming popular, I was a street musician, so I carefully studied Russian rock, choosing for myself those songs whose words resonated in me. The songs of Viktor Tsoi were revealed to me more and more. I’m standing at Pyaterochka, and it’s sunset on the street, I sing his songs loudly, without hesitation, and I feel every line, looking at passers-by. How much was the response from other people! How these songs were displayed in an ordinary everyday day!

I did not dare to take something serious, although the most expensive song of the Kino group for me is “Derevo”. I decided that now I can sing “Wake up, this is love.” Because I think it’s about a person who is very afraid of himself. And he can’t wait, he can’t go home, sleep, be afraid. He needs to run and do something. It seems to me that with ourselves and at least with our love, each of us can certainly do something.

Tsoi is a poet and musician for me, who will remain in history forever, forever. Both his figure and his songs cause great excitement and awe in me. I once heard the line: “You must be strong, you must be able to say: hands off, off me!” And then, it seems, it became clear why these songs are still alive for us. Because these are songs that are understandable to everyone and speak about human nature, its very essence so directly and concisely. We really need someone who knows for sure that you need to be strong. This samurai philosophy is completely incomprehensible to me and causes delight, catharsis.

We chose the track of the group “Kino” “April” because there is hope in it.

I always thought this track was about Christ.

This is my perception, and I do not impose it on anyone. That is why the creativity of great authors, I am not afraid of this word, is amazing and wonderful. Everyone will find there something of their own. Someone bawls Tsoi’s songs at rallies, overthrowing the regime, and someone is waiting for the Messiah to come and this world will be reset to zero.

I grew up listening to Viktor Tsoi’s songs and lately I’ve only listened to his albums. Because he won’t be able to say stupid things anymore. He said everything.

In general, I myself am from St. Petersburg, and it was the early Tsoi that always reminded me of the districts and courtyards of the middle strip of the city with low-rise buildings. The song is now more relevant than ever. Many people said goodbye to their usual life, to their home and, unfortunately, to life. In the performance of the female choir, it was revealed (for us) from the religious side, that is, about life, and about death, and about love.

Tsoi helped out more than once in difficult times, especially in a foreign land, when homesickness overcomes. I had to leave for a long time: sooner or later you start to feel sad when a feeling of loneliness comes. Wedge by wedge: “I planted a tree” and “Rain” work flawlessly. If they can’t cope, then Yegor Letov joins in, he pulls from the bottom.

When I was little, the songs of Viktor Tsoi sounded in our house mixed with Sting, Sade, The Beatles – in short, with all of this beautiful company! I am already twenty years old, and the meaning of his songs is revealed more and more every year. Every song sounds different. And I can say that I am a fan of exactly those songs that for some reason few people know. “Game”, “In the Kitchen”, “Nuclear Free Zone”, “Become a Bird” and everything in that spirit.

I even check people who say they adore Tsoi. I ask you to name three favorite songs. And if a person, apart from “Changes” and “Blood Type”, cannot name anything, then I understand that he, most likely, simply “goes with the trend”. But it is in unknown songs that he is so vulnerable and so real, without superfluous heroism, but at the same time very worthy.

For the recording, I chose my favorite and most intimate song, “Your eyes used to reflect bonfires.” I shared this song only with those closest to me, because it is like a shiny glass that you found among the stones on the seashore. You immediately hide it in your pocket and don’t want to show it to anyone. But when I was invited to this project [tribute], I immediately realized that I wanted to sing this particular song, because it would give the audience the opportunity to hear something new from Tsoi.

This is the same Tsoi whom I love. From the “Unknown” and “Unreleased” folders. Because I believe that it is in such unknown songs that are not understood by everyone and not accepted by everyone that the real, fragile, wise and vulnerable soul of the author really shines.

Ten years ago I had a bad period, and this song helped me a lot, it had a therapeutic effect. I listened to it for a week; this, in a sense, took me out of the situation in which I was. I wanted to sing this song myself, make it a little in my own way.

The offer [to cover Kino] was awesome. I am very glad that I managed to make my small contribution and make an experiment.

In fact, I didn’t listen to Kino that much, but periodically Viktor Tsoi pops up in my life. Each time a new and new brick is being laid, the foundation of my understanding that it was something great. I am very glad that this question has not been studied, but I will have many more cool moments when I discover something related to the name of Tsoi.

In addition to other records, our record library contains vinyl “This is not love” – one of the early albums of the Kino group. The song “Music of the Waves” is just our favorite track on this release, and, perhaps, in all the work of Viktor Robertovich. So, when we were offered to participate in the new tribute “We left Kino-2”, the choice was obvious! We are very happy that we got the chance to work on this amazing song.

Viktor Robertovich is a legend of Russian music. Everyone knows him. Our neighbors in the stairwell do not know who U2 are, but they know the Kino group. This is truly the folk frontman of a great band. We grew up in the 1990s, and the music of the Kino group surrounded us along with the works of Depeche Mode, a-ha and The Cure, so all this is reflected in our work.

We chose the song Good Night without hesitation. She got into my pain about those whose sleep became completely unsettled. I have an idea what this song was written about, but I heard it as a prayer.

I am moved by the fact that they say about Viktor Tsoi that he did not die, but went out for a smoke. It really feels like this, because for several decades he continues to shape our reality, captures new generations one after another, much more actively than many creators acting in these decades. Today in the subway I heard “Blood type” on a call from a young girl.

At fourteen, I considered myself the reincarnation of Viktor Tsoi. In the school hall, I pasted a photo of Tsoi over the headmaster’s portrait. I was supposed to sing “A Star Called the Sun” at the closing of the summer camp, but I was eventually suspended for not being able to sing. Fortunately, inspiration did not let me go, and soon, in a computer science lesson, I studied Tsoi’s musical tastes on Wikipedia. So I opened the ocean of British independent music, which was beautiful and artless. Like Viktor Tsoi, this music turned out to be very mysterious in places, romantic, and at the same time reflecting the deep life of young people.

In 2022, for a tribute project, I chose a song that clearly shows all these features. We tried not to lose, but to increase that very romantic spirit, the touch of which cannot be forgotten.

Choi is multifaceted. I conditionally divide his work into several periods, like Picasso’s. And personally, it was interesting for me to highlight that side of Tsoev’s talent, where his pop thinking as a songwriter was realized to the maximum. “Anthill” is an amazing mutant song, in which, on the one hand, the theme of death, the main theme for the late Tsoi, is clearly revealed. On the other hand, this macabre is packaged in such a frivolous pop wrapper, as if the Kino group suddenly decided to play Laskovy May.

The songs of the Kino group have accompanied me since early childhood, they have already become part of my DNA. They sounded in the radio of my uncle, who took me to the village to my grandmother; in disgusting versions of street musicians; performed by the artists of the Kinoproby tribute. But, probably, I only recently began to somehow more thoughtfully listen to these songs, clearing them of a layer of mass-cult bronze that distorted the impression, and comprehending their simplicity, universality, the beauty of the unity of melody and text.

The track was chosen because it gives free rein to the imagination, and everyone who listens to it hears what they want to hear. We heard it in our own way and weaved the folk song of the Smolensk region, which, in our opinion, began to live quite organically with the song of such a cult artist. In general, Tsoi’s texts always give some kind of freedom and do not force you to do anything, so we felt very comfortable in the material, although we rarely play this kind of music.

Initially, “Dictophone” appeared after I produced Oleg Garkusha’s solo album [from “Auktyon”]: at one of the jams we made a random “Sounds of Mu” “Soyuzpechat”. From this came the history of our group, and we always acted with caution and respect for the Soviet past, introducing interesting numbers into the set lists – from the above-mentioned bands to the Center and Bravo groups. Throughout the era of our debut album “I Wanted” we ended the concerts with the song “Old Hotel”, and now (on the eve of the new album) our choice fell on the song “Sadness” by the Kino group. It perfectly symbolizes the direction of suicidal-romantic punk we have chosen, and I have always had a latent love for this song.

My parents have always loved the Kino band: they saw the rise of the underground in the 1980s, and as a millennial I immediately grew up listening to Western new wave and punk music like The Stranglers and Happy Mondays. And just starting to work with the Russian language, I discovered the subtle flair of Tsoyevsky’s texts and the mood that the music and its tempo envelops. Plus, work and acquaintance with the members of the Leningrad Rock Club — Auction, Strange Games, etc. – in my eyes, they only gave the figure of Tsoi scale, mysticism, tragedy and legend.

Vika Frolova: Initially, when we were offered to participate in the collection, we approached the choice of the song very responsibly. We listened to the entire discography of the group, compiled a playlist of forty tracks that it would be interesting for us to cover. And we were already preparing for the painful selection process, when we suddenly remembered the musical idea that we recorded on the phone at rehearsals a couple of days ago. It turned out that this demo is actually “Kamchatka” by the Kino group, only with a slightly changed harmony. I tried to sing a text to it, and everything worked out by itself. We practically didn’t change anything.

Ilya Kanukhin: Before I was 20, I really disliked the Kino group, because it was associated with dudes playing out-of-tune guitars in transitions. They sang very badly, and in between they drank warm vodka and ate chebureks. The image was so repulsive that I didn’t even have a thought to take these songs seriously. But one day, at a party in Vladivostok, my friend Nikita Guzenko, who was a DJ, put on the song “We want to dance.” Before that, I had not heard her, but I immediately realized from her voice that it was “Kino”. I was so impressed by what I heard that, as soon as I returned home, I immediately began to listen to the band’s discography from the very beginning. I got to the albums “Night”, “This is not love” and stuck to them for a couple of weeks. Then I listened to everyone else. Since then, the Kino group has become one of my favorites.

Vika Frolova: In tenth grade, I started skipping school. This allowed me to get acquainted in detail with the discography of the Kino group. I liked listening to the songs “Bezdelnik” and “Bezdelnik-2” more than the math teacher. Subsequently, I still managed to combine my studies with listening to music, and I finished school pretty well. But I still partially shift the responsibility for the final triples in algebra and geometry to Viktor Robertovich. This message is not a recommendation for action. Don’t skip school and don’t listen to the Kino group during lessons, expect changes.

“Let me” is my favorite song from Kino. About four years ago I was selling acoustic monitors, and a guy came for them. We talked, it turned out that he also writes music. After some time, I saw that he had released a cover of the same song in a pop arrangement. Then I thought: wow, I should also do a cover in the future, after all, I love this song so much! And happily forgot. Several years passed, and then the idea materialized.

And this song also has unsettling harmonies that perfectly suit the aesthetics of “Stereopolina”.

Victor Tsoi’s music has been present in my life from the cradle to this day. Let me explain: it all started with dad’s cassettes, of course. Tsoi always sounded in our house, and my parents and I watched live shows when I was little. Then my first school rock band appeared, with which we played all the “Kino” up and down. Then I started writing piano covers and posting them on YouTube.

My cover of the song “Summer Will End” was the most popular of all my videos there (now it is not available. – Note ed.). By the standards of those years, it was really cool. Then I got a job in the theater – and what do you think? There was a musical and plastic one-man show “Tsoi”, which I conducted by sound for four years. Then I started writing music myself, and in the song “I’m 20 years old” there are these lines: “A super hit is playing on the gramophone, maybe it’s Choi, or maybe the Smiths.” Well, now fate brought me to the Kino tribute. It is, of course, incredible!

We chose from two songs from the record “46”: “I’m walking down the street” and “Ten minutes to”. As a result, we settled on the latter, since there was no arrangement for it, and, therefore, it was possible to experiment with instruments. That is, the interest was to try to arrange the song as if it sounded on the album “Head of Kamchatka”, which included almost all the songs from “46”.

Well, this is a very funny song!

On my VK page I am writing a whole cycle of memories about Viktor Tsoi in my life. To summarize, at the age of five I bought a badge with Tsoi – and away we go!

The idea to cover “Aluminum Cucumbers” was given to me by subscribers; this was even before I knew about the planned collection. “Cucumbers” is very similar to a children’s song: I wanted to record it as a lullaby, using a xylophone, ukulele and other “toy” instruments. Then February 24 happened, and it became clear – what the hell is a ukulele

Tsoi said more than once that there is no need to look for any meaning in “Cucumbers”, that it is just a collection of words and sounds. Some fans believe that he was cunning. Of course, I don’t know if this is true or not. But now a new perspective has opened up for me: if you imagine that these words are sung by a crazy paranoid who creates some kind of nonsense, endowing it with a sacred meaning, then all the words in the song fall into place.

For me, Tsoi is an example of how rich a musician’s life can be after his death. The personality becomes a legend, and the songs are sung, turning them upside down. You never know how history will dispose of you and your words.

We got together and listened to almost all of Viktor Robertovich’s songs. It was interesting to take an unknown track, to dig up something older. At the same time, the song should respond to us not as just cool, but as ours. It was necessary to find “your” someone else’s song, and then write it. It has a lot of cool stuff, but we were looking for something elegant, neat and romantic first and foremost. As a result, choosing between two songs, they made “Your Number”.

Tsoi’s songs – dad’s cassettes. We didn’t grow up on them, but we saw how these songs influenced our older acquaintances. It’s also a beautiful story, contagious for young musicians — it’s possible, it’s catchy.

Choosing a song was quite a challenge for us. We have our own sound and, first of all, we thought what song could sound good within its framework. What song would we ourselves be interested in hearing with such a sound. As a result, we chose “When your girlfriend is sick”, she is very sweet and light in mood.

January 2021. The height of the pandemic and bans. Cancellation of concerts. Lots of free time and almost no income. The song of the Kino group “There is time, but there is no money” became the perfect soundtrack of that period. And we decided to come up with our own version for her. We played it at house parties, underground concerts, etc. And when we were offered to participate in the tribute album “We came out of Kino-2”, we only had to record a clean copy of the already finished cover. The stars aligned. Now everything is official!

The Kino group is the first records for which you ran home, skipping classes to grab a guitar while your parents are not at home, and pick up new songs! With which you started and ended your day. Tsoi’s work is a dialogue in which you have always received and receive answers to the questions you asked. The world, as Choi saw it, seems to you your own, correct, valuable, honest. The way he should be.

Let’s consider a series of mounting glues.

Early 2000s: I’m a schoolboy rummaging through my parents’ audio cassettes. Mom points to the rewritten collection “Kino” with the words: “Strong music, you will like it.”

Late 2000s: I am a student, I live in a hostel, I sing “Blood Type” and “Cuckoo” with the guitar. The neighbor says that this is a bunch of words without meaning.

Early 2010s: I attend the “Dark Horses” festival, see “Eat Bird” for the first time and hear a sample from the song “To Us With You”. I fall in love with the sample, Alexander Sitnikov and one of the spectators.

Late 2010s: Give a Tank (!) group preparing to perform at the Kinoproby festival. According to the regulations, at least one song by Viktor Tsoi must be performed. At the rehearsal, an alternative version of “We are with you” is born. “Cinema fans” take it ambiguously.

Early 2020s: Give me a tank (!) band is invited to participate in a tribute. We’re going to timidly decline, but the aforementioned flashbacks put everything in its place. The intonation and philosophy of the song are very in tune. Initially, there were thoughts of taking something from the late work of Viktor Tsoi, but it quickly became clear that it was very important to choose a song by age, by shoulder, in order to preserve the author himself in the song as much as possible. “The Tree” came out when Tsoi was twenty years old. I think the song is very close to me because of its youth and openness.

I am very touched by Tsoi’s personality and creativity. Incredibly inspiring is his originality and a certain separateness, inspiring how he held himself, how he worked and was true to his truth. Of course, I feel him as a person from whom I want to learn a lot.

For some reason this song comes first; the second song on all the great albums is always the most extraordinary, or something. Well, what is Choi for us?

Choi is dead. And so do we.

It seems like five or six years ago they saw when some kid was playing “Fairy Tale” on the Arbat – walking provincials stuck to his out of tune guitar and bleating voice with a liquid mustache, rapping about “trees with a plague.” You never know what they play on the Arbat, of course, but there are smart and beautiful poems written with great inner (oh how pathetic it sounds) energy and something that, despite all the associations, seems understandable and one’s own.

And this is “ours” – it is what makes Tsoi a genius. Remember this amazing case with “Cuckoo” performed by Polina Gagarina at the Z-concert in Luzhniki, when Tsoi’s anti-militarist song almost turned into a hymn to “justice”. Has Choi become a stranger to those who do not support? Of course not. Have you become your own for those who support you? He was his.

Tsoi jokingly notably when he said that the song “Changes” is not about perestroika, but about love, but he didn’t joke: it is for all of us – and those who are for, and who are against, and who are about politics, and who about a normal life. And in 2022, provincial officials are trying to ban “Changes” at the festival dedicated to Tsoi’s sixtieth birthday, but they cannot: how can one ban the one who unites us in the brightest and darkest times?

Choi is alive, how to deal with him? Here he is standing in all the same Luzhniki with heroically spread legs and acoustics, with our songs, which, of course, are much closer than the authors of those songs, from which he cut off half of his repertoire.

Tsoi did not sit next to Putin at a McCartney concert, did not tour with Vote or Lose: he still stands with a raised fist in front of millions of us and in an embrace with those that we think and argue about, trying to win over to our side and think for them who they were with and what they would think now. For them – for Vysotsky, Letov, Kuryokhin, Mike, Bodrov, even Limonov.

We don’t have many of our own. They must be appreciated.

The first time I heard the group “Kino” in the already distant 1983, I got to the concert in 1984. Since then, I have been their devoted and unconditional fan, and the group’s songs are the soundtrack to my life, to all its episodes.

I believe that Kino is the most important Russian group, and its songs are still relevant today. Everyone finds something of their own in the songs of Viktor Tsoi, everyone has their own “Kino”.

The idea of ​​a tribute, in which the songs of Kino will sound as they are seen by a completely new generation of musicians, and thus give these songs a new life and audience, came to me back in 2012. Then I told Sasha Tsoi about this, he gladly supported the idea, but, unfortunately, it was not possible to implement it then. Five years later, in 2017, the stars converged and even sparkled again: the project “We left Kino” [together with Meduza]* turned out exactly as it was intended, and was very warmly received by the audience and the musical community. All the songs included in the collection continued (and continue) to live, being performed at concerts, sounding on the radio, in films and TV shows.

Thirty artists have already taken part in the new tribute “We left Kino-2”, which is released on the day of the 60th anniversary of the cult musician, all these songs were recorded especially for the collection and published for the first time. All of them are completely different both in style and in mood, and some of them sound very unexpected. But all of them are united by love for the Kino group and Viktor Tsoi, who will always be in our hearts!
